• 4 x 6oz Mountain Stream Tilapia™ Fillets
• 4 oz mixed sesame and poppy seeds
• 2 tbs oil
• 2 tbs finely sliced scallions or onions
• 6oz scallops
• ½ cup cooking wine
• 4 fl.oz lemon juice
• 4oz unsalted butter
• Salt and pepper to taste |

1. In a shallow container place the mixed sesame and poppy seeds with salt and pepper. Press the Tilapia into the mixture
one at a time and coat them on on side only. Shake the excess seeds and place aside.
2. In a medium size pan heat up oil. Place the fillet, seeds face down, until golden brown (4 min) and turn over.
3. Add scallions and scallops. Cook until slightly firm. Add the cooking wine, lemon juice, butter, salt and pepper. Reduce
heat to medium and simmer 2-4 minutes. Try serving the Tilapia fillets with cucumbers or a side salad
