• 1¼ cup of cornmeal
• Salt and pepper to taste
• 2 tsp mustard power
• 2 tsp vegetable or canola oil |

1. In a shallow dish, mix together the cornmeal, mustard powder and the salt and pepper. Press the Tilapia into the mixture to coat them thickly one at a time on both sides. Shake off the excess cornmeal and set Tilapia aside.
2. Heat oil in a medium size pan over a medium heat. Place Tilapia fillets 2 at a time in a pan and fry for 3-4 minutes on each side until crisp and golden brown. Try serving the Tilapia fillets with grilled tomatoes wheels, broccoli and lemon wedges.
